1/8 teaspoon pepper, plus more to taste
1 pork tenderloin
8 – 10 strips of bacon, cut in half

1 Heat oven to 450F.
2 In skillet over medium heat, heat oil. Add apple, onion, rosemary, thyme, cook 7 – 9 minutes, until softened. Pulse bread in food processor until you make coarse crumbs.
Remove pan with onions, apples from heat, stir in breadcrumbs, mustard, salt, pepper. Set aside.3 Cut a deep lengthwise slit down center of tenderloin, stopping about 1/2-inch from bottom of roast. Open it up like a book. Cover with a piece of plastic wrap, with a mallet or rolling pin, gently pound until it is an even thickness.
4 Spread stuffing in a line along center of meat. Bring edges of meat together to return it to its original shape. Secure with toothpicks.
5 Lay out bacon slices on cutting board, overlapping them slightly. Place tenderloin on top with the toothpicks facing up. Removing toothpicks as you work, wrap bacon slices around pork to form a log. Place tenderloin, bacon seam side down, on baking sheet.
6 Roast 20 – 25 minutes. If roast is ready before bacon browns, place under broiler 3 – 5 minutes to brown bacon.
7 Let tenderloin rest for 10 minutes before cutting into slices.
