If you've never tried Panzerotti, it's sort of like a Calzoni (if you've ever tried those before), except Panzerotti are fried instead of baked. This recipe stuffs these crescent shaped pockets with mature Mozzarella cheese and diced tomatoes, but you can also fill them with pretty much anything you'd like. My kids added pepperoni pizza fillings to theirs and they pretty much tasted like gourmet pizza bites.
I absolutely love how easy making dough is for this recipe. It has me wondering why I don't decide to go this route sooner. You can fancy up your spaghetti night by serving these beforehand as an appetizer, or you could even make these into a main meal by serving them with some proper sides.
My family likes to enjoy them as a main meal alongside caesar salad and minestrone soup. You still get that satisfying flavor of creamy cheese and starch from the Panzerotti, yet you don't have those desires taking over the whole meal when you pair them with something lighter, like a salad.
