We use white cheddar for this recipe, but you can use sharp cheddar if you prefer to. Use fine grate, but since the cheese goes into the food processor it's kind of redundant.

Ingredients To Gather:
- 6 cups All-purpose Flour
- 1/4 cup Baking Powder
- 3/4 teaspoons Salt
- 8 ounces, weight White Cheddar Cheese, Grated
- 1/3 cup Sliced Chives (or Green Onions)
- 1-1/2 cup Cold Salted Butter, Cut Into Small Pieces, Plus More For Brushing
- 2-1/2 cups Buttermilk
Step By Step Directions To Follow:
- Preheat oven to 425 F.
- In a food processor, combine flour, baking powder, salt, cheese, and chives. Pulse until ingredients are mixed together. Add butter. Pulse until mostly incorporated, but with a few remaining chunks of butter. Add buttermilk while pulsing. Stop when the dough comes together. (Add more buttermilk if dough is too dry.)
- Drop dough onto baking sheet in 1/4 cup portions (or bigger if you want). Bake for 12-15 minutes, until golden brown.
- Brush with melted butter. Sprinkle with chives.
- If a food processor is not available or you want to make this recipe the old-fashioned way, cut together the dry ingredients with the butter, then add the other ingredients.
