This recipe takes about forty minutes to prepare and is ready to enjoy in about ten hours because the cheesecake has to bake and cool. - 1 1/2 cups finely crushed animal cracker cookies
- 1 tablespoon instant coffee granules
- 1/4 cup butter
- 2 cups sugar
- 1/3 cup unsweetened cocoa powder
- 2 teaspoons instant coffee granules
- 3 tablespoons cornstarch
- 3 (8 ounce) packages cream cheese
- 4 eggs
- 1 teaspoon vanilla
- 1 cup chopped pecans
- 1/2 cup semisweet chocolate chips
- 2 tablespoons milk
- 1/2 cup marshmallow creme
The Step By Step Directions To Follow:
- Preheat oven to 350 degrees F.
- Grease 9-inch pan.
- Mix animal cracker crumbs, 3/4 cup sugar and 1 tablespoon instant coffee granules.
- Combine 1 1/2 cups sugar, the cocoa powder, 2 teaspoons instant coffee and the cornstarch.
- Add cream cheese.
- Beat in the eggs, adding the vanilla extract.
- Fold in 1/2 cup chopped pecans.
- Bake for 15 minutes; reduce heat to 200 degrees F and continue baking 2 hours.
- Melt the chocolate chips and milk.
- Spread the marshmallow cream.
- Drizzle the chocolate over the marshmallow cream and sprinkle chopped pecans overtop.
