
Ingredients:
1- 8 oz packages of cream cheese.
1 Cup of granulated sugar
1 half of a lemon
1 – 8 oz tub of whip cream
12 – Mini pie shells
¼ cup of granulated sugar
Utensils:
Large mixing bowl
Small mixing bowl
Hand mixer
Cheese grater
Cookie sheet
Table spoon
Instructions:
Step 1: Place both packets of cream cheese into a large bowl. Using your hand mixer, slowly beat the cream cheese until it forms a texture. Slowly add in the 1 cup of granulated sugar and continue to beat until sugar is not visible and the cream cheese begins to become creamy.
Step 2: Squeeze the lemon over the cream cheese mixture and continue mixing with hand mixer. Next, remove the peel and grate the lemon with a cheese grater over the cream cheese mixture. Mix together with hand mixer until well blended.
Step 3: Slowly mix the cream cheese mixture with the hand mixer and add in the whip cream by the spoonfuls. I use about 1 cup to 2 cups of whip cream, but not the whole container as that will make it to fluffy. You will want the mixture to be a little bit thick.
Step 4: Place pie shells onto a cookie sheet
Step 5: With your tablespoon, spoon cream cheese mixture into the pie shell's. Sprinkle granulated sugar on each cream cheese pie. Cover with aluminum foil and place in refrigerator. Let chill for about five minutes.
