The Scrambled Egg
This might sound a little awkward, but don't shake it until you give it a try. Scramble a few eggs in the microwave! I promise they taste just as delicious as the traditional method with a fraction of the time. With this breakfast I can still hit snooze once! Simply crack you eggs and place in a microwave safe dish. Beat them with a fork and mix in a small amount of milk. Add a little salt and pepper and zap it for about 45 seconds depending on your microwave. Now enjoy!
Smoothies
Nothing is better then a meal I can drink on the go. There are two options here, the lazy way or the normal way, take your pick! If I am feeling lazy I use frozen and pre-sliced fruit. If I am feeling ambitious I cut my own fresh fruit (it really tastes much better this way). I recommend at least 3 different fruits and feel free to get creative with your pairings. Then add some yogurt or milk and blend away. If you like your smoothie thick use less yogurt or milk, vice a versa. Some days I will make my smoothie at night and just put it in my to go cup in the fridge over night. Instant breakfast!
Nutella and Banana Sandwich
It doesn't matter the time of day, this little morsel tastes more like dessert and will get your energy pumping! You can simply make a sandwich or toast a piece of bread then spread your toppings. Delish! This meal with actually fill you up for hours and you are satisfied. In fact I think I will go make one right now!
Parfait
Do you remember the novelty of the parfait when McDonald's came out with it? Well why pay so much for one, make it at home! Simply add granola with yogurt. I like to use plain yogurt then I add fresh fruit to it. But you can use flavored yogurt too. Give it a little extra kick with a squirt of maple syrup to the top! Again these are great made fresh or the night before.
Bagel with Cucumber and Tomato
Who doesn't enjoy a warm bagel with gooey cream cheese spread on top of it? This has always been one of my favorite horse show foods. We always get them on the way to the show in the wee hours of the morning. Lets kick it up a notch. Add sliced cucumber and tomato to the top of it. Talk about refreshing!
As you can see I am a pretty simple gal and I like to keep my breakfast simple and filling. These are my favorite breakfast ideas for a busy week day morning. During the weekend is when I save the big breakfast spread to spoil my family. With all five of these ideas you can do the prep ahead of time and still log a little extra sleep. No longer will you have to choose between sleeping, showering or eating. Do it all my friend!
