However, it doesn't cut back on the flavor, which is especially indulgent here because this recipe doesn't use an ordinary batter. Instead, it uses a rich buttermilk batter that makes the chicken taste incredibly decadent, even though it's not nearly as decadent as ordinary fried chicken. Plus, this chicken has that same crispy crust we've come to adore, even though it's not fried. Who knew that was even possible?
