You can use any type of potato that you want. We used Gold Potatoes but if you want to use Red Skins then that is fine too. Also do not be afraid to use Apple Cider Vinegar in the mix for this recipe in case you do not have the white distilled on hand.
Here Is What You Need To Do….
Directions To Follow:
- Start by combining the potatoes, 1 cup vinegar, and 1 Tbsp. kosher salt in a medium saucepan.
- Next, add water so that the potatoes are covered and bring to a boil.
- Once the mixture boils, reduce heat and simmer for between 20 and 25 minutes or until the potatoes are tender.
- Once they're done, drain the water and pat the potatoes dry. Now, heat the butter over medium-high heat in a large skillet.
- When it's melted, add the potatoes and season with the pepper and the kosher salt.
- Cook until crispy and brown, which usually takes between 8 and 10 minutes.
- Toss the potatoes occasionally while cooking to ensure they cook evenly and thoroughly.
- Drizzle 2 tbsp. of vinegar over them and top with the chives and the sea salt.
This recipe just requires 45 minutes total time (preparation to presentation) and makes four servings. We like it because these definitely aren't your ordinary potatoes and they'll certainly give your guests a pleasant surprise! Plus, they're a perfect side dish and the ideal complement to any entree.
